A Simple Way to Arrange Food on Freeze-Dryer Trays

When pieces are similar in size and spread in a single layer, it is easier to see what is happening across a tray. University of Minnesota Extension recommends evenly spreading food in one layer and following the manufacturer's instructions for capacity and processing times.

Keep pieces from overlapping where possible, and leave the spacing your equipment's instructions require. This is a general organization tip, not a substitute for an Olarip tray diagram or load limit. The correct amount of food, tray arrangement and cycle depend on the model and the food.

For a mixed batch, group similar ingredients together if the equipment and manual allow it. Different foods can vary in thickness, water content and preparation needs. If you need to process them together, make a note of their positions so you can inspect samples from across the trays later. Avoid piling food higher simply to fit more; capacity limits exist for the specific machine and must come from its manual.

Before starting, check that trays are clean and that food has been handled safely. After the cycle, do not assume every tray is identical: see our guide to checking samples for dryness. For better comparisons from one run to the next, use consistent produce preparation and record the ingredient and cut size.

FAQ

· Can I stack food to fit more? Follow the equipment manual; do not exceed its capacity or prescribed arrangement.

· Can different foods share one batch? Only if the manual permits it and the foods' preparation and processing needs are compatible.
